Each waffle leaves the iron amber-brown, lacquered where pearl sugar dissolved and caramelised. Plated on cream stoneware, it catches whatever winter light pushes through the front windows. Nothing is arranged. It just looks that way.

Caramelising sugar · Roasting cacao · Pulled espresso

The first hit is sugar burning sweet against hot iron. Underneath it, cacao nibs slow-roasting in the back kitchen — dry, dusty, faintly earthy. Then the espresso machine exhales a shot: bright, acid-cut, briefly floral. Your shoulders drop before you reach the counter.

The snap comes first. Then the give.

Tempered chocolate. Waffle crust. Soft dough beneath.

Press a fork through the waffle crust — it resists for exactly one second before yielding, the crunch audible to whoever is sitting across from you. Break a square of couverture: the snap is clean, definitive, the sound of good tempering. The inside of the praline is cool silk.

Vanilla · Pearl sugar · 70% São Tomé cacao

The first taste is sweet — vanilla and caramel from the pearl sugar pockets. Then the couverture sauce arrives: fruit-forward, briefly tannic, finishing long and dark. The espresso cuts through everything. You order the same thing again before you have finished.
